Ingredients
- 1 ripe banana
- 1/3 cup almond milk
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup chia seeds
- 1/2 cup cottage cheese
- 1 vanilla wafer
Instructions
- Peel the ripe banana and place it in a blender.
- Add the almond milk, maple syrup, vanilla extract, chia seeds, and cottage cheese.
- Blend the mixture until smooth and creamy.
- Allow the blended mix to sit for 10-15 minutes to let the chia seeds thicken the pudding.
- Serve chilled in bowls and top each serving with a vanilla wafer.

Store leftovers in an airtight container in the refrigerator for up to three days. Can be frozen for a month.
