Ingredients
- 4 oz Guanciale
- 2 cloves Garlic
- 4 large Eggs
- 12 oz Spaghetti
- 1 tsp Black pepper, freshly ground
- 1 tsp Salt
- 1 tbsp Olive oil
- 1/2 cup Parmesan cheese
- 1 cup Pecorino Romano cheese
- 1/4 cup extra Pecorino Romano or Parmesan for garnishing
Instructions
- Begin by cooking the spaghetti according to the package instructions until it reaches al dente perfection.
- While the pasta cooks, pour the olive oil into a pan over medium heat. Add the guanciale, and sauté it until it’s crispy and golden.
- Toss in the minced garlic and let it cook for an additional minute, allowing those flavors to soften.
- In a separate bowl, whisk together the eggs with both the Parmesan and Pecorino Romano cheeses until smooth.
- Once the spaghetti is ready, drain it and add it directly to the pan with the crispy guanciale and garlic. Toss everything together to combine well.
- Remove the pan from heat and quickly stir in the egg and cheese mixture, mixing constantly to achieve that creamy sauce without scrambling the eggs.
- Don’t forget to season your dish with salt and freshly ground black pepper to taste.
- Serve it up immediately, garnished with extra cheese if you like!
