Description

This Italian classic is rich, delicious, and completely satisfying, perfect for weeknight dinners or special gatherings.


Ingredients

  • 4 oz Guanciale
  • 2 cloves Garlic
  • 4 large Eggs
  • 12 oz Spaghetti
  • 1 tsp Black pepper, freshly ground
  • 1 tsp Salt
  • 1 tbsp Olive oil
  • 1/2 cup Parmesan cheese
  • 1 cup Pecorino Romano cheese
  • 1/4 cup extra Pecorino Romano or Parmesan for garnishing


Instructions

  1. Begin by cooking the spaghetti according to the package instructions until it reaches al dente perfection.
  2. While the pasta cooks, pour the olive oil into a pan over medium heat. Add the guanciale, and sauté it until it’s crispy and golden.
  3. Toss in the minced garlic and let it cook for an additional minute, allowing those flavors to soften.
  4. In a separate bowl, whisk together the eggs with both the Parmesan and Pecorino Romano cheeses until smooth.
  5. Once the spaghetti is ready, drain it and add it directly to the pan with the crispy guanciale and garlic. Toss everything together to combine well.
  6. Remove the pan from heat and quickly stir in the egg and cheese mixture, mixing constantly to achieve that creamy sauce without scrambling the eggs.
  7. Don’t forget to season your dish with salt and freshly ground black pepper to taste.
  8. Serve it up immediately, garnished with extra cheese if you like!
