Ingredients

  • 2 lbs Chicken thighs or breasts
  • 2 tsp Coriander, ground
  • 4 cloves Garlic, minced
  • 1/4 cup Fresh Parsley, chopped
  • 1 cup Fresh Vegetables (e.g., lettuce, tomatoes, cucumbers)
  • 2 tbsp Lemon juice
  • 1/4 cup Tahini
  • 1 tsp Paprika
  • Salt and pepper to taste
  • 1 tsp Turmeric
  • 1/4 cup Olive oil
  • 2 tsp Cumin, ground
  • 1/4 cup Plain yogurt
  • Pita bread or wraps for serving


Instructions

  1. Combine the ground coriander, minced garlic, chopped parsley, lemon juice, tahini, paprika, salt, turmeric, olive oil, cumin, and yogurt to create a flavorful marinade.
  2. Add the chicken thighs or breasts to the marinade and ensure they are well coated. For optimal flavor, marinate for at least 30 minutes or overnight if possible.
  3. Preheat your grill or a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until it’s fully cooked and slightly charred.
  4. Remove the chicken from the heat and let it rest for a few minutes to retain moisture before slicing it thinly.
  5. Serve the sliced chicken in pita bread or wraps, topped with fresh vegetables.
