Description

A delightful twist on traditional French toast with a custardy richness and a caramelized top, perfect for brunch or special occasions.


Ingredients

  • 1 loaf Challah bread
  • 6 large egg yolks
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 cup granulated sugar
  • 1/2 cup maple syrup
  • 1 vanilla bean
  • 2 tbsp unsalted butter
  • 1 pinch salt
  • 1 cup fresh berries
  • Powdered sugar for dusting
  • Whipped cream for serving


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the egg yolks, heavy cream, whole milk, granulated sugar, maple syrup, salt, and vanilla bean seeds.
  3. Cut the Challah bread into thick slices and arrange them in a greased baking dish.
  4. Pour the custard mixture over the bread, ensuring each slice is well-coated. Cover and refrigerate for at least 2 hours, or preferably overnight.
  5. Remove from the fridge and let it sit at room temperature for about 30 minutes.
  6. Melt the butter in a pan over medium heat and add the soaked bread slices. Cook until golden brown on both sides.
  7. Transfer to the oven and bake for about 20-25 minutes until the custard is set.
  8. Dust with powdered sugar and use a kitchen torch to caramelize the top until golden and crispy.
  9. Serve warm with fresh berries and whipped cream.

Notes

Allow the custard mixture to sit for an hour before pouring over the bread for extra flavor. For a quick caramelized top, you can broil it in the oven instead of using a kitchen torch.
