Ingredients
- 1 large Cucumber
- 1 clove Garlic
- ½ tsp dried Oregano
- 2 tbsp fresh Parsley
- ¼ cup Red onion
- 1 tsp Dijon mustard
- 2 tbsp fresh Lemon juice
- ¼ tsp Black pepper
- ¼ tsp Salt
- ¼ cup extra virgin Olive oil
- ½ cup Feta cheese
Instructions
- Prepare the cucumbers and onions by slicing them thinly.
- Whisk together garlic, oregano, parsley, mustard, lemon juice, black pepper, salt, and olive oil in a small bowl.
- Combine the sliced cucumbers, red onion, and crumbled feta cheese in a large mixing bowl.
- Drizzle the vinaigrette over the salad and gently toss to mix all ingredients.
- Serve immediately or chill in the refrigerator for better flavor.
