Description

A refreshing Cucumber Feta Salad drizzled with zesty Lemon Greek Vinaigrette, perfect for summer gatherings.


Ingredients

  • 1 large Cucumber
  • 1 clove Garlic
  • ½ tsp dried Oregano
  • 2 tbsp fresh Parsley
  • ¼ cup Red onion
  • 1 tsp Dijon mustard
  • 2 tbsp fresh Lemon juice
  • ¼ tsp Black pepper
  • ¼ tsp Salt
  • ¼ cup extra virgin Olive oil
  • ½ cup Feta cheese


Instructions

  1. Prepare the cucumbers and onions by slicing them thinly.
  2. Whisk together garlic, oregano, parsley, mustard, lemon juice, black pepper, salt, and olive oil in a small bowl.
  3. Combine the sliced cucumbers, red onion, and crumbled feta cheese in a large mixing bowl.
  4. Drizzle the vinaigrette over the salad and gently toss to mix all ingredients.
