A quick and easy recipe for Chicken Pad Thai, bringing together tender chicken, vibrant veggies, and chewy rice noodles in a flavorful sauce.
Ingredients
- 1 lb Chicken breasts, boneless skinless
- 1/4 cup Cilantro, fresh
- 3 Garlic cloves, minced
- 3 Green onions, sliced
- 1/2 cup Peanuts, roasted
- 2 large Eggs
- 2 tbsp Fish sauce
- 2 tbsp Lime juice, fresh
- 1/4 cup Low-sodium Tamari or soy sauce
- 8 oz Rice noodles
- 2 tbsp Brown sugar
- 1 tsp Chili powder or flakes
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- Heat a drizzle of oil in a large pan over medium heat and sauté minced garlic until fragrant, about 30 seconds.
- Add chicken to the pan and cook until no longer pink, stirring occasionally.
- Push chicken to one side of the pan and crack eggs on the other side, scrambling until cooked through.
- Add cooked noodles, fish sauce, lime juice, tamari, brown sugar, and chili flakes. Toss until well coated and heated through.
- Serve hot, garnished with chopped cilantro, sliced green onions, and roasted peanuts.
Notes
Prep all ingredients beforehand as cooking goes quickly. Use low-sodium tamari for better salt control.
