Description

A quick and easy recipe for Chicken Pad Thai, bringing together tender chicken, vibrant veggies, and chewy rice noodles in a flavorful sauce.


Ingredients

  • 1 lb Chicken breasts, boneless skinless
  • 1/4 cup Cilantro, fresh
  • 3 Garlic cloves, minced
  • 3 Green onions, sliced
  • 1/2 cup Peanuts, roasted
  • 2 large Eggs
  • 2 tbsp Fish sauce
  • 2 tbsp Lime juice, fresh
  • 1/4 cup Low-sodium Tamari or soy sauce
  • 8 oz Rice noodles
  • 2 tbsp Brown sugar
  • 1 tsp Chili powder or flakes


Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. Heat a drizzle of oil in a large pan over medium heat and sauté minced garlic until fragrant, about 30 seconds.
  3. Add chicken to the pan and cook until no longer pink, stirring occasionally.
  4. Push chicken to one side of the pan and crack eggs on the other side, scrambling until cooked through.
  5. Add cooked noodles, fish sauce, lime juice, tamari, brown sugar, and chili flakes. Toss until well coated and heated through.
  6. Serve hot, garnished with chopped cilantro, sliced green onions, and roasted peanuts.

Notes

Prep all ingredients beforehand as cooking goes quickly. Use low-sodium tamari for better salt control.
