A refreshing twist on pasta salad combining creamy dressing with zesty dill pickles, perfect for summer gatherings.
Ingredients
- 8 oz Pasta (short pasta like rotini or shells)
- 1/2 cup White Onion (diced)
- 1 cup Dill Pickles (chopped)
- 1/3 cup Dill Pickle Juice
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 1 tsp Black Pepper
- 1 tsp Salt
- 1 cup Colby Jack Cheese (shredded)
- 1 tbsp Fresh Dill (chopped)
Instructions
- Cook the pasta according to the package instructions. Drain and let cool.
- Combine the cooled pasta with white onion, dill pickles, mayonnaise, sour cream, black pepper, salt, and fresh dill in a large bowl.
- Fold in the shredded Colby Jack cheese until well mixed.
- Taste the salad and adjust seasoning if needed.
- Cover the salad and chill in the refrigerator for at least 30 minutes to let flavors mingle.
Notes
Serve chilled. Pairs well with grilled meats or as a light lunch. Can be enhanced with additional fresh dill or toppings.
