Description

A refreshing twist on pasta salad combining creamy dressing with zesty dill pickles, perfect for summer gatherings.


Ingredients

  • 8 oz Pasta (short pasta like rotini or shells)
  • 1/2 cup White Onion (diced)
  • 1 cup Dill Pickles (chopped)
  • 1/3 cup Dill Pickle Juice
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1 tsp Black Pepper
  • 1 tsp Salt
  • 1 cup Colby Jack Cheese (shredded)
  • 1 tbsp Fresh Dill (chopped)


Instructions

  1. Cook the pasta according to the package instructions. Drain and let cool.
  2. Combine the cooled pasta with white onion, dill pickles, mayonnaise, sour cream, black pepper, salt, and fresh dill in a large bowl.
  3. Fold in the shredded Colby Jack cheese until well mixed.
  4. Taste the salad and adjust seasoning if needed.
  5. Cover the salad and chill in the refrigerator for at least 30 minutes to let flavors mingle.

Notes

Serve chilled. Pairs well with grilled meats or as a light lunch. Can be enhanced with additional fresh dill or toppings.
