Description
A vibrant and creamy Spring Pasta dish celebrating fresh vegetables, perfect for light dinners.
Ingredients
- 8 ounces of pasta (fettuccine or spaghetti)
- 2 tablespoons of olive oil
- 1 cup of mixed vegetables (bell peppers, zucchini, carrots, and broccoli)
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Toss in the mixed vegetables and sauté for 3-5 minutes until they are tender yet still crisp.
- Pour in the heavy cream, stirring gently to combine. Allow it to simmer for a few minutes until it slightly thickens.
- Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet, tossing everything together until well combined.
- Serve hot, garnished with fresh basil.
