Description

A vibrant and creamy Spring Pasta dish celebrating fresh vegetables, perfect for light dinners.


Ingredients

  • 8 ounces of pasta (fettuccine or spaghetti)
  • 2 tablespoons of olive oil
  • 1 cup of mixed vegetables (bell peppers, zucchini, carrots, and broccoli)
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Toss in the mixed vegetables and sauté for 3-5 minutes until they are tender yet still crisp.
  4. Pour in the heavy cream, stirring gently to combine. Allow it to simmer for a few minutes until it slightly thickens.
  5. Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  6. Add the cooked pasta to the skillet, tossing everything together until well combined.
  7. Serve hot, garnished with fresh basil.
