Ingredients
- 1 1/2 cups gingersnap crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups sweetened condensed milk
- 1/2 cup key lime juice
- 3 large egg yolks
- 1 teaspoon lime zest
- 1/4 teaspoon salt
- Whipped cream (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan to prevent sticking.
- Combine the gingersnap crumbs, sugar, and melted butter in a mixing bowl. Mix until well incorporated, then press into the bottom of your prepared baking pan.
- Whisk together the sweetened condensed milk, key lime juice, egg yolks, lime zest, and salt until smooth and creamy.
- Pour the lime filling over the crust in the pan, spreading evenly.
- Bake for 15-20 minutes or until the filling is set with a slight jiggle. Remove from the oven and cool at room temperature.
- Refrigerate for at least 2 hours before cutting into bars.
- Serve chilled, topped with whipped cream.
Notes
For a tropical twist, add shredded coconut to the crust or fold in fresh berries for added sweetness and color.
