Description

Delightful dessert bars with a creamy key lime filling atop a crunchy gingersnap crust, perfect for summer gatherings.


Ingredients

  • 1 1/2 cups gingersnap crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups sweetened condensed milk
  • 1/2 cup key lime juice
  • 3 large egg yolks
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt
  • Whipped cream (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan to prevent sticking.
  2. Combine the gingersnap crumbs, sugar, and melted butter in a mixing bowl. Mix until well incorporated, then press into the bottom of your prepared baking pan.
  3. Whisk together the sweetened condensed milk, key lime juice, egg yolks, lime zest, and salt until smooth and creamy.
  4. Pour the lime filling over the crust in the pan, spreading evenly.
  5. Bake for 15-20 minutes or until the filling is set with a slight jiggle. Remove from the oven and cool at room temperature.
  6. Refrigerate for at least 2 hours before cutting into bars.
  7. Serve chilled, topped with whipped cream.

Notes

For a tropical twist, add shredded coconut to the crust or fold in fresh berries for added sweetness and color.
