Ingredients
- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- Salt and pepper to taste
- Optional: diced tomatoes, bell peppers, or onions
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin well.
- In a mixing bowl, whisk together the eggs and milk until fully blended.
- Stir in the chopped spinach and crumbled feta cheese, then season with salt and pepper.
- Carefully pour the egg mixture into the muffin tin, filling each cup about three-quarters full.
- Sprinkle any additional diced vegetables on top (optional).
- Bake in the preheated oven for 20-25 minutes, or until set and golden-brown on top.
- Allow the muffins to cool for a few minutes before gently removing them from the tin.
- Serve warm or cool completely for meal prep storage.
Notes
These muffins can be customized with additional vegetables or different cheeses. They store well in the refrigerator for up to 5 days and can be frozen for longer preservation.
