Ingredients
- 8 boneless skinless chicken thighs
- 3 sprigs fresh dill
- 3 tablespoons minced garlic
- 1 lemon (juiced)
- 1 tablespoon dried oregano
- 1 shallot (finely chopped)
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 cup full-fat plain Greek yogurt
Instructions
- Combine the Greek yogurt, minced garlic, lemon juice, chopped dill, oregano, paprika, salt, and pepper in a large bowl. Mix until well blended.
- Add the chicken thighs to the marinade, ensuring they are evenly coated.
- Cover the bowl and refrigerate for at least 60 minutes, but if you can, marinate them overnight for even richer flavor.
- Preheat your grill or oven to medium-high heat when you’re ready to cook.
- Remove the chicken from the marinade, allowing any excess to drip off.
- Grill or bake the chicken for about 20-25 minutes, or until it’s fully cooked and the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before serving to maximize juiciness.
Notes
For the best flavor, don’t skip the marinating time! If possible, marinate overnight. You can substitute chicken breasts for thighs if desired.
