Ingredients

  • 8 boneless skinless chicken thighs
  • 3 sprigs fresh dill
  • 3 tablespoons minced garlic
  • 1 lemon (juiced)
  • 1 tablespoon dried oregano
  • 1 shallot (finely chopped)
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup full-fat plain Greek yogurt


Instructions

  1. Combine the Greek yogurt, minced garlic, lemon juice, chopped dill, oregano, paprika, salt, and pepper in a large bowl. Mix until well blended.
  2. Add the chicken thighs to the marinade, ensuring they are evenly coated.
  3. Cover the bowl and refrigerate for at least 60 minutes, but if you can, marinate them overnight for even richer flavor.
  4. Preheat your grill or oven to medium-high heat when you’re ready to cook.
  5. Remove the chicken from the marinade, allowing any excess to drip off.
  6. Grill or bake the chicken for about 20-25 minutes, or until it’s fully cooked and the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for a few minutes before serving to maximize juiciness.

Notes

For the best flavor, don’t skip the marinating time! If possible, marinate overnight. You can substitute chicken breasts for thighs if desired.
