Description

This baked oatmeal is a wholesome and delicious way to start your day, combining rolled oats with fresh fruits and nuts.


Ingredients

  • 1 cup Blueberries, fresh
  • 1 cup Raspberries, fresh
  • 2 cups Rolled oats, old-fashioned
  • 2/3 cup Maple syrup
  • 1 large Egg
  • 2 1/2 cups Milk
  • 1 tsp Baking powder
  • 1 tsp Cinnamon, ground
  • 1/2 tsp Ginger, ground
  • 1/2 tsp Kosher salt
  • 2 tsp Vanilla extract
  • 3 tbsp Butter, unsalted
  • 1 cup Almonds
  • Nonstick Cooking spray
  • 1 Greek yogurt


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish with nonstick cooking spray.
  2. Combine the rolled oats, baking powder, ground cinnamon, and kosher salt in a large mixing bowl.
  3. Whisk together the egg, maple syrup, vanilla extract, and milk until smooth in another bowl.
  4. Pour the wet mixture into the dry ingredient bowl and mix well until everything is combined.
  5. Fold in the blueberries, raspberries, and almonds gently to add freshness and crunch.
  6. Transfer the mixture into the prepared baking dish and dot the top with small pieces of unsalted butter.
  7. Bake for 30-35 minutes or until the top is golden brown and the oats have set nicely.
  8. Allow it to cool slightly before serving warm, topped with a dollop of Greek yogurt.

Notes

Don’t overmix ingredients to keep the oatmeal light and fluffy. Customize with your favorite fruits or nuts.
