Description

Bright, tangy key lime pie bars with a buttery crust and creamy filling, perfect for summer gatherings.


Ingredients

  • 1/2 cup Key lime juice
  • 1 tbsp Lime zest
  • 4 Egg yolks
  • 1 pinch Salt
  • 2 tbsp Sugar
  • 1/2 tsp Vanilla extract
  • 15 sheets Graham crackers
  • 6 tbsp Unsalted butter, melted
  • 1 (14-ounce) can Sweetened condensed milk
  • 6 oz Cream cheese


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the graham crackers in a food processor until fine crumbs form.
  3. Combine the crumbs with melted butter and press the mixture firmly into the bottom of a greased 8 x 8 inch baking pan.
  4. Bake for about 8 minutes until golden brown.
  5. Whisk together the key lime juice, lime zest, egg yolks, salt, sugar, vanilla extract, sweetened condensed milk, and cream cheese in a mixing bowl until smooth.
  6. Pour the mixture over the baked crust, spreading it evenly.
  7. Return the pan to the oven and bake for 15-20 minutes until the filling is set but still slightly jiggly in the center.
  8. Let the bars cool at room temperature, then refrigerate for at least 2 hours to firm up.
  9. Cut into bars and serve chilled, garnished with extra lime zest or whipped cream if desired.

Notes

Best served chilled. Can be topped with whipped cream or lime zest for added flair. Store leftovers in an airtight container in the refrigerator for up to a week.
