Ingredients

  • 1 1/2 cups Coconut milk (full fat, from a can)
  • 1/4 cup Lemon juice (fresh)
  • 1 tbsp Lemon zest
  • 1 Pinch Sea salt
  • 1 tsp Vanilla extract (pure)
  • 1/2 cup Chia seeds
  • 3 tbsp Maple syrup or honey
  • 1 cup Fresh berries (for topping)
  • 1/4 cup Coconut flakes (for garnish)
  • Whipped cream or coconut yogurt (optional, for serving)


Instructions

  1. Whisk together coconut milk, fresh lemon juice, lemon zest, maple syrup (or honey), and a pinch of sea salt until well combined.
  2. Stir in the chia seeds, ensuring they are fully incorporated into the mixture.
  3. Cover the bowl with plastic wrap or a lid and refrigerate it for at least 180 minutes, or overnight if you have time, until the pudding thickens considerably.
  4. Use a fork to fluff the pudding and portion it into serving dishes just before serving.
  5. Top with fresh berries, sprinkle with coconut flakes, and add a dollop of whipped cream or coconut yogurt if desired. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. Avoid adding fresh toppings until just before serving.
