A quick and delightful pasta dish featuring vibrant basil pesto, tender chicken, and fresh spinach, perfect for busy weeknights.
Ingredients
- 2 Chicken breasts
- 2 cups Baby spinach, fresh
- 1/2 tsp Garlic powder
- 1/4 cup Sun-dried tomatoes
- 1/2 cup Chicken broth
- 1/2 tsp Lemon juice
- 1/4 cup Pesto
- 8 oz Pasta
- 1 tbsp All-purpose flour
- Salt and pepper
- 1 tbsp Olive oil
- 1 tbsp Butter
- 3/4 cup Heavy cream
- Parmesan cheese
Instructions
- Start by boiling a pot of salted water and cook the pasta until al dente. Reserve a small amount of pasta water, then drain the rest.
- While the pasta is cooking, season the chicken breasts with salt and pepper. Heat olive oil and butter in a skillet over medium heat and cook the chicken until it’s golden and fully cooked through. Let it rest for a few minutes before slicing it.
- Sprinkle the flour into the skillet and allow it to cook for about a minute, stirring continuously.
- Gradually add the chicken broth, heavy cream, pesto, lemon juice, and sun-dried tomatoes. Bring the mixture to a gentle simmer, allowing it to thicken.
- Combine the cooked pasta, spinach, and sliced chicken into the skillet, tossing everything well to coat.
Notes
For creaminess, reserve some pasta water. Feel free to swap ingredients based on what you have at home.
