Ingredients
- 1 cup orzo pasta
- 1/2 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Begin by cooking the orzo according to the package instructions. Once cooked, drain it and allow it to cool completely.
- In a large bowl, mix together the cooled orzo, feta cheese, cherry tomatoes, cucumber, red onion, and parsley.
- For the dressing, whisk together the olive oil, lemon juice, salt, and pepper in a separate small bowl.
- Pour the dressing over the salad mixture and toss everything together to combine well.
- Serve the salad chilled or at room temperature for the best flavor experience.
