Description

Ingredients

  • 1 cup orzo pasta
  • 1/2 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Begin by cooking the orzo according to the package instructions. Once cooked, drain it and allow it to cool completely.
  2. In a large bowl, mix together the cooled orzo, feta cheese, cherry tomatoes, cucumber, red onion, and parsley.
  3. For the dressing, whisk together the olive oil, lemon juice, salt, and pepper in a separate small bowl.
  4. Pour the dressing over the salad mixture and toss everything together to combine well.
  5. Serve the salad chilled or at room temperature for the best flavor experience.

Notes
