Ingredients
- 4 tilapia fillets
- 1 cup roasted red peppers
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat a tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add the roasted red peppers and a splash of chicken broth. Stir everything together and let it simmer for about 5 minutes.
- Carefully slide the tilapia fillets into the pan. Cook them for about 4-5 minutes on each side, or until the fish flakes easily with a fork.
- Serve this dish over a bed of rice or alongside crusty bread.
