Description

A vibrant salad combining roasted sweet potatoes, black beans, and crunchy veggies tossed in a zesty lime dressing.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 small red onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Juice of 2 limes
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced sweet potatoes in olive oil, cumin, salt, and pepper.
  3. Spread them out on a baking sheet and roast for 25-30 minutes, or until they are tender and caramelized.
  4. In a large bowl, combine the black beans, diced red bell pepper, corn, and red onion.
  5. Once the sweet potatoes are done, allow them to cool slightly before adding them to the bowl with the other ingredients.
  6. Drizzle the lime juice over the salad and toss to combine.
  7. Garnish with fresh cilantro before serving.
