Ingredients

  • 1 package cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, chopped (any color)
  • 1 cucumber, diced
  • 1/4 cup fresh basil, chopped

  • Salt and pepper, to taste


Instructions

  1. Cook the tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions. Once done, drain and rinse under cold water to cool.
  2. Prepare the veggies: While the tortellini cools, chop the cherry tomatoes, bell peppers, and cucumber into bite-sized pieces.
  3. Mix everything together: In a large bowl, combine the cooled tortellini, chopped vegetables, and fresh basil.
