Description

A delightful dish of Spicy Thai Peanut Noodles with Chicken that balances savory, spicy, and nutty flavors, perfect for busy weeknights or cozy weekends.


Ingredients

  • 1 lb Chicken breast
  • 1/4 cup Cilantro
  • 2 cloves Garlic
  • 1/4 cup Green onions
  • 2 tbsp Honey
  • 2 tbsp Lime juice
  • 1/2 cup Peanut butter
  • 1/4 cup Soy sauce
  • 1 tbsp Sriracha sauce
  • 8 oz Rice noodles
  • Salt and pepper
  • 1 tbsp Sesame oil


Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. Heat sesame oil in a skillet over medium heat. Add chopped chicken breast and cook until it’s fully cooked and juices run clear.
  3. Mix together peanut butter, soy sauce, honey, lime juice, sriracha, and minced garlic in a bowl to create the creamy sauce.
  4. Toss the cooked chicken and rice noodles with the sauce in the skillet, allowing everything to mingle.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped green onions and cilantro before serving. Enjoy your meal!

Notes
